Ingredients
  

– 4 medium zucchinis

    – 4 slices of bacon, diced

      – 2 cloves garlic, minced

        – 2 large eggs

          – 1/2 cup grated Parmesan cheese, plus extra for serving

            – Salt and black pepper to taste

              – Fresh parsley, chopped (for garnish)

                Instructions
                 

                Using a spiralizer, spiralize the zucchinis into noodles. Set aside.

                  In a large skillet over medium heat, cook the diced bacon until crispy. Remove from skillet and set aside on a paper towel-lined plate.

                    In the same skillet with the bacon fat, add minced garlic and sauté for about 1 minute until fragrant.

                      Add the zucchini noodles to the skillet and toss for 2-3 minutes until slightly softened.

                        In a small bowl, whisk together eggs and grated Parmesan cheese.

                          Remove the skillet from heat and quickly pour the egg mixture over the zucchini noodles, stirring continuously until the eggs thicken and coat the noodles. Be careful not to scramble the eggs.

                            Add the cooked bacon back into the skillet and toss everything together until well combined.

                              Season with salt and black pepper to taste. Garnish with chopped fresh parsley and additional grated Parmesan cheese if desired.

                                Serve immediately while hot.
